Mark fields as modified

Is it possible to set Date Subject Created as modified for all files in a folder without clicking on each file?

Not direclty. Why do you need to do this?

You could use the Time Wiz  to change the date and time of each file by adding a second, then removing the second again.
This will mark the timestamp tag as modified.

If you select all the files in a folder (ctrl-a in folder view), then click the pen icon for the metadata tag, does that work?    (I just tested for Description and it worked for me).

This sets the tag for which you clicked the pen to the data of the focused file.
I don't think this is what's needed here.

This is explained in the Metadata Panel help topic: Icons used in the Metadata Panel (blue box).
The same works also in the Keyword Panel. If you click the pen, you apply the Keywords to all selected files.
