Once I have dismissed the load progress overlay how can I recall it?

As long as this is on, the overlay will show automatically. Dismissing it is just a one-time choice for the current batch.
If you want to re-enable it the files currently in the process queue, close and re-open IMatch.

Otherwise: Edit > Preferences: Application : Use load progress overlay.
