Why does IMatch sample category MP3Files|Various contain all the files in my database? None of them are actually .MP3 files ... Anything I may have committed unknowingly?

You seem to be using a very old version of that category or it was changed.
Please open the data-driven properties of that category and make sure the File Format filter (near the top) is set to the .mp3 extension. This filters out all non-MP3 files and the Various node should vanish.
