Is it possible to a) remove all previous auto-created face annotations and b) prevent these from being created in the future?

IMatch does not automatically create face annotations automatically.
If your files already have face regions in the XMP metadata (added by another software), IMatch by default imports these face regions and converts them into face annotations.
This way you can actually see the face data contained in your files. Else it would be hidden inside the metadata.
You can control this via Edit > Preferences > Metadata 2 Settings (https://www.photools.com/help/imatch/#rmh_config_metadata2.htm?dl=h-5). See Import XMP face tags into Annotations on that page.
To remove face annotations from IMatch (and metadata) use the Viewer.
To find all files with face annotations, just click the corresponding collection the Collections View. See Face Collections (https://www.photools.com/help/imatch/#anno_basics.htm#a_face?dl=h-28)
There is also a dedicated command to remove face annotions: Commands menu > Image > Face Annotations > Delete Face Annotations.
