How do I show all files in a folder when viewing Media & Folders  and Categories?
Do i have to re-scan with all selected types to show in database?

What do you mean by "all files"?
IMatch always imports all files it supports. Which are over 100 formats. See Edit > Preferences > File Formats.
What is missing?

You should not keep unmanaged files in folders managed by IMatch for safety reasons.
You can use the "Open in Windows Explorer" command to open a folder from IMatch in Windows Explorer.

The jpg files come with XMP files.  When I copied over jpg files I realized the XMP files didn't get copied over with the jpg files.
So how do I view XMP files or make sure they are copied over to a new location?

IMatch automatically copies, moves, renames XMP sidecar files for file formats which don't use embedded XMP data (RAW files, video files etc.).
JPEG files always use embedded XMP metadata, hence IMatch does not copy/move/rename stray XMP files with the same name as the JPEG file.

So why do camera produce XMP files if they are imbedded into the jpg files? 
So I dont need them or have to worry about the XMP files?

By standard, XMP metadata must be embedded into JPEG, PSD, DNG, TIFF, GIF, PNG etc. files.
External sidecar files are to be used for RAW files.

Which camera produces an XMP file for JPEG? Or did you "touch" that file in another software previously?
I'm not aware of any camera which produces separate sidecar files for JPEG images.

If the XMP has the same name as the JPEG, IMatch will consider it when importing/creating XMP data when ingesting the XMP.
Have you looked at the Metadata Panel and was data missing? This would be quite uncommon.

When you write-back, IMatch will update the existing XMP record in the JPEG, or create one from all the data it has for the JPEG.
IMatch will not modify the XMP sidecar file you have by default and for good reasons.

Tip: You can look easily at the actual metadata in the JPEG. Use the IMatch ExifTool Command Processor for this purpose.
Select the JPEG, start the ECP and run the "List Metadata" preset. This shows you all IPTC, EXIF, GPS, XMP etc. data in the image.

I don't recall how the XMP files were produced. I did a check with my Cannon SD1400 IS and no XMP file was produced.  I checked a few jpg metadata. It's all there.

I've attached an XMP file.   

Just to finish I don't need XMP files and just ignore them?

The creator tool is specified as V101-00. Usually this should be the name of the software or camera. Probably Minolta uses the firmware version (?) for this field.
Looks like the XMP file was produced by an older Adobe XMP toolkit version and by some camera or software from Minolta.
This record should be embedded in the JPEG file, not in a separate XMP file.
