Pach&Go performance

I tend to run P&G every time I close IMatch. That takes about 5 minutes and P&G processes 2 databases, 1297 files in 419 folders and it produces a package of 3,44 Gb.

But it apparently uses only 1 of my 24 logical processors, but that one is maxed out to 100%. Is there a setting to improve the performance of P&G or is this meant to be normal?

Pack & Go is designed to be used when you transfer your IMatch database and settings to another computer - e.g. before traveling or when you go on-location.
Something that usually happens only occasionally. It was never intended to be used as a replacement for system backups or to be run every time you close IMatch.

Top-notch performance or utilizing all processor cores was never a requirement.
Trying to parallelize database operations or packing files may gain some extra performance, but would also massively complicate Pack & Go internally. Not worth it for such a rarely used tool.

If you feel the need to run Pack & Go every time you close IMatch, I assume you are using it as some sort of backup (not using it to transfer your work to a second PC).
In that case, I would suggest you reply on a proper backup solution like Macrium Reflect or TrueImage and run it several times a day, as needed.
