As the headline says, I have some pictures which show the small GPS symbol (earth) in the file window, but no GPS data in any field which starts with "GPS...". I wrote metadata to the files, I started optimiziation and diagnosis of the database several times, I refreshed the folder these files are stored. I closed and opened IM again and again, but the GPS symbol keeps staying in the file window.

When moving the mouse onto the symbol, it says it contains GPS data. Click on it to open the map panel. The map panel opens, but doesnt show any position of the picture (as it doesnt contain any GPS data).

Is there any way to get rid of this symbol when there is no GPS data in the metadata?

Did you read the release notes for the 2021.16.2 release?
This is covered there: https://www.photools.com/release-notes/?productId=490  #01709
If you have 2021.16.2 installed, it does not happen again.

I have 2021.16.2 installed. When editing one file, the symbol goes away. When editing multiple files, the symbol stays.

Update: When selecting multiple files, entering 0, saving, then deleting the 0, saving; then the GPS symbil goes away.

When I edit multiple files in the MD panel and only one (or some) files have GPS data, the other files don't get the extra GPS icon.
Or do you mean you tried to reset multiple files at once and that did not work? This can happen, since this is rare and the "fix" works only per file. Setting 0 coordinates and back works just fine in this case.
