I'm using the Universal Catalog. How can I find out how many Categories are in it? I have not add or deleted any Categories to it.

I've included the Universal Catalog in IMatch 3 around 2004 or so I think. This is really old stuff by now...
The number of categories in your database is displayed in the Info & Activity panel. There is no count for the number of children in specific parts of the hierarchy.

So there is no way to do something liike this Unassigned Files? to find out the number of children and child Categories in the  Universal Catalog by using a formula.

Unassigned files are files that you have not assigned to any category.
Useful to bring these up to identify files tha you may want to assign.

I usually sort these by Capture Time (Most recent) so at least I keep up-to-date with stuff I've recently photographed.

The Uncategorized and Unassigned categories show you all files not assigned to any category and files not manually assigned to any category. The numbers you see indicate the number of files.

Every category shows the number of files it contains, and the summed up number of files in its child categories. You see this counts in the Category View and Category Panel.
But you asked after the number of categories in your Universal Catalog. IMatch does not count child categories, only files.

This is really old stuff by now...Universal Catalog. It might be old but why is the Universal Catalog not used? What befits do you lose or gain by using yhr Universal Catalog?

I've added the Universal Catalog back in the days to get users something to start with.
Nothing to say against using it when it does what you need. You can even import it into your Thesaurus to make it more usable.
